Black-Eyed Pea And Sausage Salad - cooking recipe
Ingredients

1 lb. kielbasa sausage
1/4 c. parsley
2 cans (16 oz. each) black-eyed peas, rinsed and drained
5 oz. frozen baby green peas
1 c. diced tomatoes
1/2 c. minced onions
1/2 c. carrots, peeled and sliced very thin
1/2 c. chopped celery
1/4 c. olive oil
1 clove minced garlic
2 Tbsp. fresh lemon juice
1 tsp. salt
2 tsp. grainy mild mustard
1/4 tsp. black pepper
Preparation
-
Thaw green peas.
Slice and quarter kielbasa.
Cover sausage with water in a saucepan and heat to boiling.
Reduce heat and simmer for 5 minutes.
Drain and cool slightly.
Combine veggies and toss.
