Fresh Strawberry Cheesecake Pie - cooking recipe
Ingredients

1 baked pie shell, cooled
6 oz. cream cheese, softened
2 tsp. sugar
1 qt. fresh strawberries, washed, hulled and halved
1/3 c. sugar
1 Tbsp. cornstarch
whipped topping
Preparation

In a small bowl, combine cream cheese and 2 teaspoons sugar. Beat until smooth; spread on bottom of crust.
Puree half of the strawberries.
In a 2-quart saucepan, combine pureed strawberries, remaining sugar and cornstarch.
Cook and stir over medium-low heat until mixture thickens and becomes clear (about 7 to 10 minutes); remove from heat.
Stir in rest of strawberries; let cool 10 minutes and pour into crust.
Refrigerate at least 3 hours; serve with whipped topping.
Serves 6.
