Baked Eggplant - cooking recipe

Ingredients
    1 eggplant
    1/4 c. butter
    1/2 c. bread crumbs
    1 tsp. minced onion
    2 eggs
    salt and pepper
Preparation
    Pare eggplant; cut in cubes.
    Cook in salted water until tender.
    Mix eggs together.
    Add crumbs, onion, butter, salt and pepper.
    Drain eggplant; mix all together.
    Pour into buttered dish.
    Bake in a 400\u00b0 oven until brown.
