Ingredients

1 lb. fresh beets
2 tsp. cornstarch
1/2 tsp. ginger
1/2 tsp. ground nutmeg
3/4 c. orange juice
1 (11 oz.) can mandarin oranges, drained
Preparation

Leave root and one-inch of stem on beets; scrub with a vegetable brush.
Place beets in a saucepan; add water to cover. Bring to a boil; cover, reduce heat and simmer 30 to 35 minutes or until tender.
Drain.
Pour cold water over beets and drain again. Trim off roots and stems and rub off skins; slice beets and set aside.
Combine cornstarch and next three ingredients in a medium saucepan; bring to a boil and cook one minute, stirring constantly.
Add sliced beets and mandarin oranges to sauce; cook until thoroughly heated. Makes six servings.
