Black Beans And Rice - cooking recipe

Ingredients
    1 (16 oz.) pkg. black beans
    1 1/3 c. rice (precooked volume)
    1 (13 1/2 oz.) can chicken broth
    2 medium onions, chopped
    1 medium carrot, chopped
    1 tsp. salt substitute
    1/2 tsp. cayenne pepper
Preparation
    Soak beans according to package directions; drain off water. Place beans in a large pot.
    Add enough fresh water to cover beans by about 2 inches.
    Add carrot, onions, chicken broth, salt substitute and cayenne pepper.
    Bring to boil, then reduce heat and simmer covered until beans are done (at least 1 1/2 to 2 hours).
    Stir occasionally and check for adequate water level. Prepare rice according to package directions.
    Serve beans on top of rice.
