1 c. flour
3/4 c. sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. nutmeg
1 1/2 c. shredded carrots
2 eggs, lightly beaten
1/2 c. oil
1/4 c. water
1/2 tsp. vanilla
Preparation

In an 8-inch pan with fork mix well flour, sugar, cinnamon, salt, baking soda, baking powder and nutmeg.
Add remaining ingredients to mixture and mix briskly with fork until blended. Bake in 350\u00b0 oven for 30 minutes or until pick comes out clean and cake pulls away from sides of pan.
Cool, frost or sprinkle with 10x sugar.
