Beef And Broccoli - cooking recipe

Ingredients
    3/4 lb. beef tenderloin
    1/2 c. beef stock
    1 Tbsp. cornstarch
    1 Tbsp. soy sauce
    1 Tbsp. dry sherry
    4 Tbsp. olive oil
    1 lb. broccoli florets
    pinch of red pepper flakes
    salt
Preparation
    Cut beef into strips 1-inch long, 1/4-inch thick and 1/2-inch wide; set aside.
    In a small cup, stir together stock, cornstarch, soy sauce and sherry; set aside.
    In a heavy skillet, heat 2 tablespoons oil until very hot.
    Add broccoli, then toss and stir for 2 minutes.
    Cover and cook for 2 minutes more over medium heat; remove to side dish.
    Return skillet to high heat and add remaining 2 tablespoons oil and heat until smoking hot.
    Add beef and cook 2 minutes.
    Stir in stock mixture and add along with broccoli.
