Meat Stuffed Eggplant - cooking recipe

Ingredients
    1 eggplant
    1/2 lb. ground meat (pork, turkey or beef, lean)
    1/2 c. bread crumbs
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 c. green pepper, chopped
    1 c. chopped celery
    1 c. chopped onion
    2 Tbsp. chopped garlic
    1 (16 oz.) can whole tomatoes, quartered
Preparation
    Cut top but don't peel eggplant; remove pulp leaving 1/2 inch shell.
    Parboil shell 3 minutes.
    Combine chopped pulp with meat, crumbs and seasonings.
    Stuff the eggplant with meat mixture. Replace top with toothpicks.
    Brown green pepper, celery, onion and garlic.
    Add tomatoes.
    Season and simmer for 15 minutes. Pour sauce over and around eggplant in baking dish.
    Bake at 350\u00b0 in oven for 1 hour.
    Serves 6.
