Low-Fat Cream Of Broccoli Soup - cooking recipe
Ingredients

2 c. broccoli, chopped
2 c. carrots, diced or julienne
4 Tbsp. margarine or 1/2 c. vegetable broth
2 c. onions, diced
3 Tbsp. flour
6 c. hot vegetable broth
1 c. low-fat or skim milk
salt and pepper to taste
Preparation

Saute onions in margarine or broth until clear.
Add flour; stir until light brown.
Add broth and stir well.
Add broccoli and carrots; let cook 25 minutes.
Drain vegetables and save broth.
Puree 1/2 of the vegetable mixture.
Add pureed vegetable back to broth and whisk in to blend.
Add milk while heating on low heat.
Add vegetables that were not pureed.
Heat to serving temperature.
