Strawberry Oatmeal Bars - cooking recipe

Ingredients
    1 1/4 c. all-purpose flour
    1 1/4 c. quick-cooking oats
    1/2 c. sugar
    1/2 tsp. baking powder
    1/4 tsp. salt
    3/4 c. butter or margarine, melted
    2 tsp. vanilla extract
    1 c. strawberry preserves
    1/2 c. flaked coconut
Preparation
    In a bowl, combine dry ingredients. Add butter and vanilla; stir until crumbly. Set aside 1 cup. Press remaining crumb mixture evenly into an ungreased 13 x 9 x 2-inch baking pan. Spread preserves over crust. Combine coconut and reserved crumb mixture; sprinkle over preserves. Bake at 350\u00b0 for 25 to 30 minutes or until coconut is lightly browned. Cool. Yield: 3 dozen.
