Baked Mushroom Rice - cooking recipe

Ingredients
    1 c. uncooked rice
    1/2 c. sliced green onions, with tops
    1 Tbsp. butter or oleo
    1 (2-1/2 oz.) can sliced mushrooms with liquid
    1/4 c. chopped pimentos
    1-1/2 c. chicken broth
    1/4 c. dry sherry
    1 tsp. salt
    1/2 tsp. seasoned pepper
Preparation
    Sprinkle rice in a buttered baking dish.
    In skillet, saute onions in butter until soft.
    Add remaining ingredients.
    Bring to boil.
    Pour this mixture over rice in baking dish; stir.
    Cover with a tight fitting lid or foil.
    Bake at 375 degrees for 25 to 30 minutes or until rice is tender and liquid is absorbed.
    Fluff lightly with fork.
    Yield:
    6 servings.
