Black-Eyed Peas And Ham Hocks(Makes 4 Servings) - cooking recipe
Ingredients

2 lb. smoked ham hocks, cut into 2-inch pieces
1/2 lb. black-eyed peas, soaked 4 hours and drained
2 stalks celery, chopped
1 yellow onion, peeled and chopped
1 green pepper, seeded and chopped
1/2 tsp. crushed red pepper flakes or to taste
salt and pepper to taste
Preparation

Place hocks in a covered kettle and add water to barely cover. Bring to boil.
Simmer 2 hours or until tender.
Add peas (drained) and other remaining ingredients.
Cook covered until the peas are tender, about 45 minutes.
