Mock Chili Relleno - cooking recipe
Ingredients

8 to 10 green chilis, roasted and seeded
1/2 to 3/4 cup shredded cheese (Monterey Jack or cheddar)
6 well beaten eggs
Preparation

Spray small round casserole dish with cooking spray.
Layer chilis and cheese.
Top with well beaten eggs gently lifting chilis to allow mixture to go under the chilis.
