Black Beans And Rice - cooking recipe

Ingredients
    1 lb. black beans
    1 c. chopped onion
    1 green pepper, chopped
    1 garlic clove, chopped
    4 c. cooked rice
    1/2 c. olive oil
    2 tsp. salt
    1/2 tsp. black pepper
    1 smoked ham bone
    1/4 c. chopped green onion
    1/4 c. red wine vinegar
Preparation
    Wash black beans in accordance with package instructions. Boil beans in 6 cups water.
    Saute chopped onion, green pepper and garlic in olive oil for 5 minutes or until softened.
    Add sauteed mixture to beans with salt, black pepper and ham bone. Cover and simmer until beans are soft, adding more water as needed.
    Serve over rice.
    Garnish with green onion and vinegar (to taste).
    Recommended with seafood or as cold salad.
