Low-Calorie Oatmeal Cookies - cooking recipe
Ingredients

2 eggs, slightly beaten or 1/2 cup egg substitute
low calorie sugar substitute (to equal 1/2 c. sugar; I used Sweet 'N Low)
1/3 c. packed brown sugar
2 Tbsp. margarine, melted
grated peel of 1 Sunkist orange
1/3 c. fresh squeezed orange juice
2 c. high protein cereal (Special K)
1 1/2 c. quick oats, uncooked
3/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Preparation

In a large bowl, combine eggs, sugar substitute, brown sugar and margarine.
Stir in peel, juice, cereal and oats.
Sift together remaining dry ingredients.
Add to cereal mixture, blending well. Drop batter from teaspoon on lightly greased cookie sheets. Bake at 375\u00b0 for 8 to 9 minutes. Cool on wire racks. Makes about 4 dozen cookies.
Contains about 36 calories per cookie.
