Mountain Muffins - cooking recipe

Ingredients
    1 c. whole wheat flour
    3 Tbsp. brown sugar
    2 tsp. baking powder
    1/4 tsp. baking soda
    dash of salt
    1 beaten egg
    1/2 c. milk
    2 bananas, mashed
    1/4 c. cooking oil
    1/2 c. raisins
    1/2 c. coconut (optional)
Preparation
    Combine flour, sugar, baking soda and salt in large bowl. Stir in egg, milk, banana and oil; mix well.
    Add oats, raisins and coconut; stir to blend.
    Line muffin tins with paper liners. Fill 2/3 full.
    Bake at 375\u00b0 for 20 to 25 minutes.
    Makes 1 dozen muffins.
