Zucchini Bread - cooking recipe

Ingredients
    6 eggs
    4 c. sugar
    4 tsp. vanilla
    2 c. oil
    3 c. zucchini, grated
    6 c. flour
    2 tsp. baking powder
    2 tsp. salt
    2 tsp. soda
    2 c. chopped nuts
    1 c. coconut
    20 oz. can crushed pineapple with juice
Preparation
    Beat eggs until fluffy; add sugar, vanilla, oil and zucchini that's grated.
    Blend good.
    Add all dry ingredients alternating with pineapple, nuts and coconut.
    One or 1 1/2 cups of raisins may be added but if so, add an extra 1/2 teaspoon soda and extra 1/2 teaspoon baking powder.
    Grease and flour pans.
    Makes 4 loaves. Bake at 325\u00b0 for 1 1/2 hours or until done.
    Test with toothpick for being done.
