Quail In A Bag - cooking recipe
Ingredients

1 Tbsp. flour
6 quail
salt
ground red cayenne pepper
1 c. chopped onion
1/2 c. chopped bell pepper
1 lb. fresh mushrooms
bay leaf
1 c. Sauterne wine
1/2 lemon
1 c. water
Preparation

Grease pan.
Put 1 tablespoon flour in a large cooking bag and shake well, coating sides evenly.
Split dressed birds down the back.
Salt and red pepper them.
Rub seasonings well into the birds.
Put the birds in the bag.
Add all the other ingredients to the bag to tie.
Punch 12 holes in top of the bag with a 2-tined fork.
Bake at 350\u00b0 for 45 minutes.
Serves 4 to 6.
