Rice Casserole - cooking recipe

Ingredients
    1 c. water
    1/2 green pepper, diced
    1 stick oleo
    1 c. rice
    1/2 onion, chopped
    1 can beef consomm
    2 1/2 lb. small zucchini
    2 tsp. olive or vegetable oil
    1/2 tsp. salt
    1/4 tsp. freshly ground pepper
Preparation
    Preheat oven to 450\u00b0.
    Cut zucchini in half crosswise; cut each half lengthwise into quarters.
    Toss with oil, salt and pepper in large bowl.
    Arrange zucchini on a jelly roll pan in a single layer.
    Roast 30 minutes, until tender.
    Transfer to serving bowl. Serves 8.
