Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red beans
    2 Tbsp. oil
    1 large onion, chopped
    1 bunch green onions, chopped
    2 cloves garlic, chopped
    1/2 c. celery, chopped
    1 large bell pepper, chopped
    1/2 lb. smoked sausage or ham
    2 c. rice
Preparation
    Soak red beans overnight.
    Rinse before cooking.
    Saute vegetables in large pot.
    Add sausage or ham.
    Add rinsed red beans.
    Cover beans with water and bring to a boil.
    Simmer about 1 1/2 hours until beans are soft.
    Add salt and pepper.
