Blackberry And Zucchini Bread - cooking recipe

Ingredients
    1/4 c. vegetable oil
    1/2 c. sugar
    3 egg whites
    1 Tbsp. freshly grated orange rind
    1/2 c. orange juice
    1 1/2 c. whole wheat flour
    1 1/2 c. white flour
    1 tsp. baking soda
    2 tsp. baking powder
    1 (16 oz.) can blackberries (in water), drained
    1 1/2 c. finely shredded zucchini
Preparation
    Combine all ingredients except berries and zucchini until just blended. Fold in the berries and zucchini. Turn into a sprayed loaf pan (with vegetable spray) and bake at 350\u00b0 for 1 1/2 hours. Check after the first 45 minutes to prevent browning too quickly. Makes 15 slices per loaf.
