Carrot-Raisin Relish - cooking recipe
Ingredients

3 c. shredded carrots
1 c. seedless raisins
1 Tbsp. mayonnaise
6 Tbsp. light cream or half and half
1 Tbsp. lemon juice
dash of salt
dash of pepper
Preparation

Mix carrots and raisins in bowl.
Sprinkle with sugar; toss lightly.
Chill at least 30 minutes.
Combine mayonnaise, cream, lemon juice, salt and pepper in a small bowl.
Stir into carrot mixture just before serving.
Spoon into lettuce cups.
Makes 6 servings.
