Blueberry Corn-Bran Muffins(12 Muffins) - cooking recipe
Ingredients

1 1/2 c. oat bran
1 c. yellow cornmeal
1/4 c. sugar
1 Tbsp. baking powder
1 c. skim milk
2 Tbsp. canola oil
1/2 c. blueberries
3 egg whites
Preparation

Preheat oven to 425\u00b0.
Line 12 muffin cups or spray with Pam. In large mixing bowl or food processor, combine bran, cornmeal, sugar and baking powder.
In small mixing bowl, combine milk and oil; stir into the dry ingredients and stir in the blueberries. Beat egg whites until stiff and fold them into the batter.
Spoon batter into muffin cups and bake 20 minutes.
