Partridges On A Bed Of Leeks - cooking recipe

Ingredients
    8 partridges
    4 Tbsp. butter
    1 Tbsp. vegetable oil
    6 to 8 leeks, cut into 1-inch slices
    salt and pepper
    1/3 c. heavy cream
    2 Tbsp. parsley, chopped
Preparation
    In a large skillet, saute the partridges in 1 tablespoon butter and the oil, browning quickly on all sides.
    Remove.
