Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dry red kidney beans
    2 lb. smoked sausage, cut in bite size pieces
    2 c. chopped onions
    2 c. chopped bell pepper
    1 Tbsp. Cajun seasoning
    salt and pepper to taste
Preparation
    Soak beans overnight.
    When ready to cook, drain.
    In pot, add enough water to cover beans well; add sausage and season. Cook for 1 hour on medium heat.
    Add pepper and onions.
    Cook until beans are tender.
    Serve over rice.
