Carrot Cake - cooking recipe
Ingredients

2 c. flour
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
2 c. sugar
1 1/2 c. vegetable oil
4 eggs
3 c. grated carrots
8 oz. Philadelphia cream cheese
1 box powdered sugar
1 stick margarine
2 tsp. vanilla
1 can coconut
1/2 c. chopped pecans
Preparation

Blend the cream cheese, powdered sugar, margarine and vanilla. Add coconut and nuts. Frost. Chill in refrigerator for best taste. Serves 16. Can freeze. Must do ahead. Tastes best if cold.
