Cream Of Broccoli Soup - cooking recipe

Ingredients
    3 lb. fresh broccoli
    4 c. chicken broth
    1/4 c. butter
    2 medium onions, chopped
    2 c. heavy cream
    1/4 c. flour
    white pepper
    nutmeg
    salt
Preparation
    Trim flowerets from broccoli and blanch.
    In heavy saucepan, melt butter and saute onions.
    Stir in flour; whisk in broth and cream.
    Stir until boiling.
    Reduce heat.
    Chop flowerets and add to soup.
    Season to taste.
    Heat through to meld flavors, but don't overcook.
