Hominy Casserole - cooking recipe
Ingredients

4 slices bacon
2 large onions, chopped
1 green pepper, chopped
1 (4 oz.) can mushrooms, sliced and drained
1 (29 oz.) can hominy, drained
1 tsp. Worcestershire sauce
1 (10 oz.) can tomatoes with green chiles
1 tsp. salt
1 tsp. pepper
1 c. cheese, shredded
Preparation

Cook bacon in skillet until crisp.
Drain; reserve drippings. Crumble bacon.
Add onions and green pepper to drippings in skillet.
Saute until tender.
Stir in mushrooms, hominy, Worcestershire sauce, tomatoes and seasonings.
Cook 20 to 30 minutes, over medium heat, stirring occasionally.
Stir in bacon. Alternate layers of hominy and cheese in 2-quart casserole, ending with cheese.
Bake, uncovered, 20 minutes at 350\u00b0.
