1 c. old fashioned oats
2 Tbsp. plain flour
1/4 tsp. baking powder
1/2 c. unsalted butter, melted
1 c. sliced almonds
1 c. sugar
1/2 tsp. salt
1 egg, lightly beaten
1 tsp. vanilla
Preparation

Heat oven to 325\u00b0. Combine oats, sugar, flour, salt and baking powder. In separate bowl, whisk egg, butter and vanilla. Add to dry ingredients. Stir, then add almonds and mix well. Line a cookie sheet with foil (very important). Spray with cooking spray. Drop level teaspoons of dough 3-inches apart. Flatten slightly. Bake until golden, 9 to 10 minutes. Cool completely, then peel from foil.
