Minestrone - cooking recipe

Ingredients
    1 c. diced potato
    1/2 c. each: chopped onion and carrot
    1 Tbsp. oil
    1 can (14.5 oz.) whole tomatoes
    2 c. chicken broth
    1 can (8 oz.) tomato sauce
    1/2 c. dry small elbow macaroni
    1/2 c. chopped zucchini
    1 c. chopped lettuce
    Salt and ground black pepper to taste
    Freshly grated Parmesan cheese (optional)
Preparation
    Brown potato, onion and carrot in hot oil until lightly golden.
    Add and mix tomatoes, broth, sauce and macaroni; bring to a boil, breaking up tomatoes while stirring.
    Reduce heat.
    Simmer uncovered 10 minutes.
    Add remaining ingredients.
    Simmer 5 minutes, stirring occasionally.
    Sprinkle with cheese before serving, if desired.
    6 servings.
