Diabetic Cake - cooking recipe
Ingredients

1/2 c. margarine, melted
1 Tbsp. liquid sweetener
2 c. self-rising flour
1 c. chopped nuts or Grape-Nuts cereal (optional)
1/4 tsp. clove
1 c. chopped dried dates
1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
1 tsp. cinnamon
1 1/2 c. applesauce, unsweetened pineapple, crushed, or mashed bananas
Preparation

Cream margarine, egg and sweetener.
Add baking powder, spices, flour and (I like pineapple the best) applesauce or pineapple.
Mix well.
Fold in dates and nuts.
(I leave nuts out to save on calories.)
Bake in loaf pan at 300\u00b0 for 30 to 45 minutes.
Spray pan well before pouring batter in pan.
Cool 10 minutes before removing from pan.
This cake must be kept refrigerated.
