Nana Bette'S Carrot Cake - cooking recipe

2 c. flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1 3/4 c. sugar
1 c. oil
3 eggs
1 tsp. vanilla
2 c. shredded carrots
1 c. flaked coconut
1 c. chopped walnuts
1 (8 1/4 oz.) can crushed pineapple, drained
Preparation

Grease and flour 13 x 9 x 2-inch dish.
Mix first 5 ingredients in large bowl.
Add the next 4 ingredients and beat with wooden spoon until smooth.
Stir in next 4 ingredients until blended.
Pour in pan.
Bake at 350\u00b0 for 45 minutes.
Press lightly in center for doneness.
Cool completely.
