Fresh Apple Cake - cooking recipe
Ingredients

2 c. sugar
1 1/2 c. vegetable oil
1 1/2 tsp. vanilla
3 c. chopped firm apples
1 c. pecans pieces
3 large eggs
3 c. flour
1 tsp. salt
1 tsp. soda
3/4 c. coconut
Preparation

Mix sugar and oil; add eggs one at a time, beating well. Combine salt and soda; add to oil mixture.
Stir in vanilla, apples, coconut and pecans.
Pour into tube pan sprayed with Pam and bake at 325\u00b0 for 80 to 90 minutes.
Cool and serve.
Makes large cake and mellows with age.
