Buffalo Chili Con Carne - cooking recipe

Ingredients
    1 lb. cubed or coarsely ground buffalo meat
    2 Tbsp. cooking oil
    1 to 2 c. diced onion
    1 to 2 c. diced green pepper
    2 cans (16 oz. each) diced tomatoes with liquid
    1 1/2 to 2 c. tomato juice
    1 (15 1/2 oz.) can dark red kidney beans, rinsed and drained
    1 (15 oz.) can pinto beans, rinsed and drained
    1 (4 oz.) can chopped green chilies
    2 tsp. chili powder
    1 tsp. salt (optional)
    1/2 tsp. pepper
Preparation
    In a large kettle or Dutch oven, brown meat in oil; drain. Add onion and green pepper; saute for 5 minutes.
    Stir in remaining ingredients and bring to a boil.
    Reduce heat, cover and simmer 1 1/2 to 2 hours or until the meat is tender.
    Yields 6 servings (1 1/2 quarts).
