Peppered Chicken And Rice - cooking recipe

Ingredients
    4 chicken breasts
    1 Tbsp. salt
    1 Tbsp. black pepper
    3 Tbsp. oleo
    1 large onion, diced
    1 small bell pepper, sliced
    2 c. rice
Preparation
    Combine chicken breasts, salt, black pepper, bell peppers, onion and oleo in a large boiler in enough water to provide an adequate amount of broth.
    Boil until chicken breasts are very tender.
    Cook over medium heat about 45 minutes.
    Add uncooked rice (do not use instant).
    Reduce heat to low and cook, covered, until all broth is absorbed into rice.
    Stir occasionally but keep covered as much as possible.
