Turban Fillets - cooking recipe

Ingredients
    4 (4 oz.) flounder fillets
    salt and pepper
    8 medium chopped shrimp
    4 Tbsp. backfin crabmeat
    2 scallions, chopped
    3 or 4 Tbsp. grated Mozzarella cheese
    melted butter
    Hollandaise Sauce
    paprika
Preparation
    Sprinkle fillets with salt and pepper.
    Set aside.
    Mix shrimp, crabmeat, scallions and cheese and spread on fillets.
    Roll fillets into a turban and secure with wooden picks.
    Place turbans on end in a well-greased baking dish.
    Brush generously with melted butter.
    Bake at 350\u00b0 for 15 to 20 minutes or until fish flakes easily when tested with a fork.
    Remove from oven and drain off all liquid.
    Top the seafood with your favorite Hollandaise Sauce and sprinkle with paprika.
    (Individual dishes work best for this recipe.)
    Serves 4.
