Meat Croquettes(Leftover Meat) - cooking recipe

Ingredients
    1 c. thick white sauce
    1 tsp. each: minced onion and parsley
    2 c. chopped cooked meat (roast beef, pork, veal, lamb, chicken, etc.)
Preparation
    Mix together.
    Chill.
    Shape into pyramids or cylinders.
    Roll in fine dry bread crumbs.
    Set aside 2 to 3 hours in refrigerator. Dip in mixture of 1 egg (slightly beaten) and 2 tablespoons water. Again, roll in fine dry bread crumbs.
    Let dry again 1 1/2 hours (refrigerate).
    Fry in deep fat (400\u00b0) until delicately browned (1 1/2 to 2 minutes).
    Drain on absorbent paper in warm place.
    Keep hot in oven until time to serve.
    Serve hot with hot mushroom or tomato sauce or any desired sauce.
    Yield:
    8 pyramid croquettes, 3 inches high.
