Texas Caviar - cooking recipe
Ingredients

1 lb. dried black-eyed peas
2 c. Italian salad dressing
1 1/2 c. regular onions, chopped
1 c. green onions, chopped
1/4 to 1/2 c. jalapeno peppers, diced
2 c. diced bell pepper
2 oz. diced pimiento
1 Tbsp. garlic, diced or garlic salt to taste (optional)
salt and Tabasco sauce to taste
Preparation
-
Soak peas overnight.
Drain and/or add more water and simmer 40 minutes or until tender.
Drain well.
Mix with remaining ingredients.
Serve hot or cold.
