Aunt Dora'S Squash Souffle - cooking recipe
Ingredients

1/2 c. chopped onion
1/4 c. chopped green pepper
1/4 c. butter
3 to 4 lb. yellow, white or zucchini squash
1 1/2 c. fine bread crumbs
1/4 tsp. black pepper
2 eggs, beaten
Preparation

Saute onions and green pepper until soft and light brown. Wash and slice squash.
Cook in boiling water until soft.
Drain and put through food processor, blender or chopper.
Add onion, green pepper, butter, bread crumbs and seasonings.
Add eggs and beat thoroughly.
Pour into well-buttered casserole and bake at 350\u00b0 for 30 minutes.
Serves 8 to 10.
