Carrot Cake - cooking recipe
Ingredients

1 1/4 c. oil
2 c. flour
2 tsp. baking soda
2 c. sugar
3 c. grated carrots
4 eggs
1 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1 c. nuts or raisins
Preparation

Combine oil and sugar in a large bowl.
Sift together flour, salt, soda and cinnamon.
Add to oil and sugar and mix well.
Beat in eggs, vanilla and carrots.
Fold in nuts or raisins.
Bake at 350\u00b0 in a 9 x 13 x 2-inch greased cake pan for 45 minutes, or until center springs back to the touch.
This cake is very moist and keeps well.
