Pecan Roast - cooking recipe

Ingredients
    1/2 c. celery, chopped
    1/2 c. onions, chopped
    1/4 c. green peppers, chopped
    2 c. Special K cereal (crush after measuring)
    3/4 c. pecan meal (finely ground pecans)
    1 c. bread or cracker crumbs
    2 pkg. light George Washington broth
    1/3 c. mayonnaise
    1 c. low-fat cottage cheese
    3 eggs, beaten
    onion salt
    2 Tbsp. soy sauce
Preparation
    Cook celery, onion and peppers in 2/3 cup water for 10 minutes.
    Mix all ingredients together in a large mixing bowl. Bake in well-oiled loaf pan at 375\u00b0 until nicely browned (about 1 hour).
    Serves 8 to 10.
