Roux In The Microwave - cooking recipe

Ingredients
    2/3 c. oil
    1 c. plain flour
    2 c. chopped onion
    1 c. chopped celery
    1/2 c. chopped bell pepper
    1 clove minced garlic
    1 c. chopped green onion
    chopped parsley to taste
Preparation
    In a 4-cup Pyrex measuring cup, put oil and flour.
    Microwave on High for 6 minutes.
    Stir and microwave for 1 minute at a time, stirring after each minute, until as brown as you like.
    Add onion, celery and bell pepper.
    Microwave for 3 minutes.
    If desired, add garlic, green onion and parsley.
    Microwave for 2 minutes.
    Pour into prepared gumbo stock, about 4 quarts.
