Spinach Pesto - cooking recipe
Ingredients

3 c. fresh spinach, stems discarded
2 c. fresh parsley leaves
1/2 c. Parmesan cheese
1/2 c. Romano cheese
1/2 c. oil
1/4 c. blanched almonds
1/2 stick butter
2 Tbsp. pine nuts
3 large garlic cloves, crushed
1 tsp. salt
1 tsp. vegetable oil
salt
1 lb. pasta
freshly grated Parmesan cheese
Preparation

Puree first 10 ingredients in blender or processor until smooth.
Set aside.
Bring water to boil in large pot.
Add oil and salt.
Add pasta and cook over medium heat until al dente. Strain through colander, reserving 1/3 cup of liquid.
Blend hot liquid into puree and toss with pasta.
Serve with Parmesan cheese.
