Linguine With Spicy Eggplant Sauce - cooking recipe

Ingredients
    1 lb. hot or sweet Italian sausage
    1/4 c. olive or salad oil
    1 medium sized eggplant, diced
    1/4 c. minced parsley
    1 box linguine
Preparation
    Remove sausage meat from casings.
    In a 4-quart saucepan over medium-high heat in hot olive oil, cook sausage meat until browned, stirring frequently to break up sausage with slotted spoon.
    Remove sausage to bowl.
