Scalloped Eggplant - cooking recipe

Ingredients
    1 medium size eggplant
    2 eggs, beaten
    1 c. grated cheese
    1 chopped onion
    1 1/4 c. saltine crackers, crushed
    1/2 stick margarine
    1/2 tsp. salt
    1 Tbsp. milk (or a little more)
Preparation
    Peel and cut eggplant into cubes.
    Cook in salted water until tender.
    Add margarine, cheese, onion, crackers, salt, eggs and milk.
    Put in greased baking dish and bake at 350\u00b0 until brown.
