Smoked Sausage Stew - cooking recipe

Ingredients
    1 lb. smoked sausage
    3 carrots, coarsely cut
    2 to 3 celery stalks (leaves also), coarsely cut
    1 onion, coarsely cut
    1 bay leaf
    3 to 5 peppercorns
    1/2 c. chopped parsley
    3 potatoes, cut into bite size
Preparation
    Preboil smoked sausage to remove a bit of the excess fat and then cut into bite size pieces.
    Place sausage pieces in a saucepan.
    Fill with water just to cover meat.
    Add all other ingredients, except potatoes.
    Cook for 1/2 hour, stirring occasionally.
    Add potatoes and cook until soft.
    Add salt and pepper to taste.
    Serve with bread.
