Ingredients

2 1/2 c. milk
1/2 c. uncooked rice
1/2 tsp. salt
1/4 c. sugar
1/4 tsp. nutmeg or cinnamon
1/2 c. seedless raisins (optional)
Preparation

Scald milk in top of double boiler.
Add other ingredients slowly, stirring constantly.
Cook covered over hot water until rice has absorbed the milk, about 1 1/4 hours, stirring frequently.
Serve warm with cream.
