African Stew(International: Africa) - cooking recipe

Ingredients
    4 onions, diced
    2 (4 lb.) boneless, skinless chicken breasts, cut into pieces
    2 tsp. salt
    4 c. water
    1/2 c. vegetable oil
    6 potatoes, cubed
    6 c. tomato juice
    flour (for thickening)
    2 (16 oz.) cans stewed tomatoes
    dash of cayenne powder
Preparation
    Brown chicken and onions in oil until completely done, stirring frequently.
    Drain chicken.
    Retain 2 tablespoons of oil.
    Place chicken in oil and remaining ingredients, except flour, in large pot.
    Cover the pot and simmer over medium heat for 45 to 50 minutes.
