Senate Bean Soup - cooking recipe

Ingredients
    16 oz. pkg. navy beans
    1 to 1 1/2 smoked ham shanks
    1 c. chopped celery
    1/4 tsp. pepper
    1 tsp. oregano leaves
    1 tsp. salt
    2 qt. water
    1 c. chopped onions
    2 cubed potatoes
    1 tsp. nutmeg
    1 tsp. basil leaves
Preparation
    Combine beans,\twater
    and ham shank in large deep pot. Simmer 1 1/2
    hours
    or
    until
    beans
    are tender.
    Remove ham shank and trim meat off bone.
    Return to pot and add remaining ingredients. Simmer

    20\tto 30 minutes, until beans
    are tender
    and soup has thickened.
    Serves 10 (1 cup) portions.
