Double Cheese And Zucchini Bake - cooking recipe
Ingredients

1/2 c. butter (1 stick)
1 medium onion, chopped
2 cloves garlic, minced
8 medium zucchini, sliced
2 c. Monterey Jack cheese, shredded
1 c. Parmesan cheese
1/2 c. dry bread crumbs
1 tsp. Italian seasoning
salt and pepper
3 eggs, beaten to blend
1/2 c. whipping cream
Preparation

Preheat oven to 350\u00b0.
Butter 9 x 13-inch glass baking dish. Melt 1/4 cup butter in heavy skillet.
Add onion and garlic and cook until softened, stirring occasionally, 4 to 5 minutes.
Add zucchini and cook until just tender, about 10 minutes, stirring frequently.
Remove from heat.
Stir in 1 cup Monterey Jack cheese, 1/2 cup Parmesan cheese, 1/4 cup bread crumbs and Italian seasoning.
Season with salt and pepper.
Transfer mixture to prepared dish.
Sprinkle remaining Monterey Jack cheese.
Combine eggs and cream.
Pour over zucchini; sprinkle remaining Parmesan and bread crumbs over.
Dot with remaining 1/4 cup butter.
Bake until golden brown, about 40 minutes.
